A creamy pasta dish with smoked salmon and coconut sauce. Topped with fresh dill and pecorino cheese, it's a quick and easy dinner that feels fancy but isn't complicated to make.

Cook the pasta according to packet instructions.

Meanwhile, cut the courgette. In a large pan, heat oil over medium heat and add the courgette.

Once the courgette is softened a bit, add in the dill, coconut milk and lemon juice. Add sea salt and black pepper to taste. Stir for a few minutes.

Turn off the heat, add the smoked salmon and grated pecorino. Serve with some extra grated pecorino on top.
